Anchovies are very small salty fish with a high oil content. They are widely used in Mediterranean countries and are a good source of Omega-3 fatty acids. Anchovies are less 'fishy' when used whole and can add a great umami flavour to dishes. Anchovies can be eaten whole as the skin and bones are soft. The average weight per anchovy is around 20 grams.
